<p>Ingredients:</p>
<p>Mutton/ Lamb small pieces with bone 1 ½ lb</p>
<p>Green chillies (whole) 5-6<br />
Ginger paste 1 tablespoon<br />
Garlic 1 teaspoon<br />
Red chilli powder ½ teaspoon<br />
Yogurt 1 ½ cups<br />
Onion 1 large (finely chopped)<br />
Lime/ Vinegar 2 tablespoon<br />
(fenugreek, fennel, cumin, kalonji, mustard seeds) 1 tablespoon<br />
Amchur powder ½ teaspoon<br />
Shaan achari gosht masala 1/ 2 packet (Use less if you prefer mild flavor)<br />
Oil for frying 5/6 tablespoon (approx)</p>
<p>Method:<a href="http://www.shebeautytime.com/achari-gosht/achari-gosht-2/" rel="attachment wp-att-2255"><img class="aligncenter size-full wp-image-2255" title="Achari-Gosht1" src="http://www.shebeautytime.com/wp-content/uploads/2012/10/Achari-Gosht1.jpg" alt="Achari-Gosht1" width="350" height="233" /></a></p>
<p>1. Make slit lengthwise of green chillies. Mix Shaan Achaar Gosht masala, lime, amchur powder and fill the chillies with this mix.</p>
<p>2. Marinade the meat with lime juices, little amount of salt &amp; red chilli powder.</p>
<p>3. Roast spices/ fenugreek, fennel, cumin, kalonji &amp; mustard seeds and grind coarsely.</p>
<p>4. Heat oil in a heavy bottom pan and add red chilli and garlic. When the garlic starts to change color, add chopped onion, meat, Shaan masala, yogurt, ginger paste. Cook on low flame with lid closed. Stir occasionally<br />
and add little amount of water as needed.</p>
<p>5. When the meat is tender after cooking 1 ½ hrs- 2 hrs depending upon the type of meat, add green chillies filled with spices. Cook for few more minutes. The oil will separate from the meat.</p>
<p>6. For preservation add vinegar instead of lime and can be eaten for 7 days if stored in airtight container in refrigerator</p>

<p>Ingredients</p>

<li>Mutton -1/2 kg</li>
<li>Onion &#8211; 200 gms</li>
<li>Tomato &#8211; 100 gms</li>
<li>Ginger &#8211; Garlic paste &#8211; 1 tsp</li>
<li>Turmeric powder a pinch</li>
<li>Chilli powder &#8211; 1/2 tsp</li>
<li>Pepper powder &#8211; 2 tsp</li>
<li>Salt to taste</li>
<li>Curry leaves</li>
<li>Coriander leaves</li>
<li>Oil for cooking</li>
</ul>
<p>For dry roast</p></div>

<li>Poppy seeds &#8211; 1 tsp</li>
<li>Fennel seed 1/2 tsp</li>
<li>Pepper corns &#8211; 4 nos</li>
<li>Coriander Seeds &#8211; 1 tsp</li>
<li>Cumin 1 tsp</li>
<li>cinnamon &#8211; 1 small piece</li>
<li>cloves &#8211; 2</li>
<li>cardamom &#8211; 2</li>
</ul>
<p>Method</p></div>

<ol>
<li>Wash and pressure cook Mutton pieces with 2 cups of water, salt and turmeric. Drain the cooked mutton from water and keep the water aside.</li>
<li>Chop Onions, Tomatoes. Keep aside</li>
<li>Take a Kadai, dry roast all the masala. Once cool, grind to a fine powder.</li>
<li>Then heat Oil, add curry leaves. Then add onions. Sauté till the onions are brown. then add ginger garlic paste. cook well. Then add tomatoes and mutton pieces, cook on high flame till the tomatoes are soft.</li>
<li>Then add the ground masala and sim for 5 mins, then add the water and bring to boil. Cook on high flame until the water evaporates leaving a nice thick gravy. Now fry the pieces until oil comes out. Once the water is completelygone, each piece gets a nice coating around it. In the end, add the remaining pepper powder over the pieces and stir it well.</li>
<li>Finally garnish with finally chopped coriander leaves and with lemon, onions.</li>

2 Cow Brains or 4 Sheep Brains<br />
4 medium Onion (peeled &amp; finely chopped)<br />
4 Green Chillies (Hari Mirch) (chopped)<br />
2 Lemons (Nimbu)<br />
½ tbsp. of Red Chilli Powder (Pisi Lal Mirch)<br />
1 ½ tbsp. of Coriander Powder (Pisa Dhania)<br />
1 tsp. of Garam Masala<br />
Salt (to taste)<br />
1 tsp. of Ginger Paste (Pisi Adrak)<br />
1 tsp. of Garlic Paste (Pisa Lasan)<br />
½ cup of Plain Yogurt<br />
1 cup Cooking Oil</p>
<p>INGREDIENTS FOR GARNISH:-<br />
1 small piece of Ginger (Adrak) (finely chopped lengthways)<br />
A bunch of Fresh Coriander/Cilantro Leaves (Hara Dhania) (chopped)</p>
<p>METHOD:<br />
Wash the brain thoroughly and boil in water. After boiling remove the<br />
brain from the water and remove any membrane and nerves carefully. Cut<br />
brain into small pieces.</p>
<p>Heat cooking oil in a pot or karai and fry the sliced onion until they are golden brown. Remove half of the onions and set aside. To the onion in the pan, add the spices, ginger paste, garlic paste, plain yogurt , green chillies and salt. Fry well for about 10 minutes by adding a little water<br />
if needed.</p>
<p>Add the brain and holding the pan by the handles, gently shake the pan to mix.<br />
Do not stir with a spoon. When the oil separates, sprinkle with chopped coriander, lemon juice, finely chopped ginger and the remaining brown onion.</p>

<p>Chicken Corn Soup<br />
Ingredients:</p>

• Chinese Salt 1 Tsp<br />
• Corn Flour 4 Tbsp<br />
• Salt 2 Tsp<br />
• Egg whites 2<br />
• Corn Paste 5 Tbsp<br />
Method:<br />
• Take bony part from 1 chicken, add water and one small onion to that and let it cook.</p>
<p>• When it gets thoroughly cooked, remove meat from bones and shred.</p>
<p>• Add bones again to the broth and cook again. Remove from heat when 5 cups broth is left.</p>
<p>• Take one can of corn and make a paste in grinder. You can also use fresh corn.<br />
• Mix 4 Tablespoons of corn flour in half cup water.</p>
<p>• Beat the egg whites well and place aside.<br />

<p>Instructions:-</p>
<p>Remove skin of tomatoes.</p>
<p>In a pot add chicken, Garlic (Lehsan), Ginger (Adrak) and salt. cover up and cook on low heat till the water from the chicken have dried and chicken is half cooked.</p>
<p>Add oil, tomato, green chili and onion. Cover and continue cooking. When the water dries and chicken is tender add the Black peppercorn (Kali Mirch), stir and take out from heat.</p>
<p>Serve with boiled rice.</p>

<p>1 tsp. garlic (Lehsan) paste</p>
<p>1 tsp. ginger (Adrak) paste</p>
<p>100 ml. oil</p>
<p>1 to 1½ tsp. salt (as per taste)</p>
<p>100 ml. tomato &#8211; ground<a href="http://www.shebeautytime.com/chicken-curry/chicken-curry-2/" rel="attachment wp-att-1730"><img class="alignright size-full wp-image-1730" title="Chicken-Curry-2" src="http://www.shebeautytime.com/wp-content/uploads/2011/10/Chicken-Curry-2.jpg" alt="Chicken-Curry-2" width="239" height="250" /></a></p>
<p>1-2 green chilies -chopped</p>
<p>1 tsp. garam masala. OR 1 black cardamom (Bari Ilaichi) seeds,</p>
<p>2 green cardamom (Chhoti Ilaichi) seeds,</p>
<p>1 small stick cinnamon (Dalchini)</p>
<p>10 black pepper (Kali Mirch)</p>
<p>6-8 cloves (Laung)</p>
<p>¼ tsp. cumin seeds (Zeera)</p>
<p><span style="text-decoration: underline;">Garnish</span></p>
<p>2 tsp. fresh coriander (Dhaniya) leaves and green chilies (chopped)</p>
<p><span style="text-decoration: underline;">Instructions</span></p>
<p>cook onion paste in oil to light brown. Add Ginger (Adrak), Garlic (Lehsan) paste, yogurt, Coriander Seeds (Dhaniya) powder, chili powder, Turmeric (Haldi) powder, tomato, and salt.</p>
<p>Mix and fry for a short time and then add the chicken.</p>
<p>Mix it and give permission it cook for 10-15 minutes till the chicken becomes tender and the preferred consistency of curry is achieved. (add water only to have the required consistency)</p>
<p>Garnish with green chilies, green coriander (Dhaniya) leaves and garam masala.</p>
<p>Serve with naan or boiled rice.</p>

cumin, turmeric, chilli, methi and lots of garlic.</p>

Serves : 4</p>
<p>Chicken Marination<br />
Marinate for 4 hours or overnight</p>
<p>Ingredients:</p>
<p>* 6 chicken thighs and 3 whole chicken legs, skinned<br />
* 7 large cloves of garlic<br />
* 1/2&#8243; cube of ginger<br />
* 1 1/2 tsp garam masala powder<br />
* 1/2 tsp cumin powder<br />
* 1/2 tsp coriander powder<br />

* juice of 1 small lime<br />
* 1/4 tsp of salt<br />
* 16 oz of plain yogurt</p>
<p>1. Wash and pat dry the chicken pieces<br />
2. Make slits on the chicken pieces with a knife, set aside<br />
3. Place all of the ingredients except the yogurt in blender and puree<br />
4. Place chicken in a bowl and with your hands thoroughly blend in the spiced garlic/ginger paste<br />
5. Next add the yogurt and blend well<br />
6. Cover with Saran wrap and let stand for a few hours or refrigerate overnight</p>
<p>Cooking the Chicken</p>
<p>Ingredients:</p>
<p>* 5 tbsp vegetable oil<br />
* dash of salt</p>
<p>1. In a large skillet, over medium-high heat add vegetable oil and a dash of salt<br />
2. Add the chicken pieces covered in the marinade. Cover and cook over low heat until chicken is cooked through, turning chicken over during cooking<br />
3. When done, remove from heat.</p>
